I like making up screwing with recipes. This one is adapted from a few I found on the interwebs. It suits a bunch of picky eaters as it’s gluten free, can be made dairy free (substitute the butter for coconut oil) and has no refined sugar*.
*Except for the teeny tiny bit of icing sugar dusted over the top because I’m not a celiac and I DO WHAT I WANT! ;)
Decadent Coconut Flour Brownies
1/2 cup each:
butter (or coconut oil)
3 eggs (room temperature)
1 tbs vanilla extract
1. Preheat oven to 300.
2. Mix all ingredients by hand.
3. Pour into greased 9x9 glass baking dish.
4. Bake for 35-40 minutes (or until a toothpick comes out clean).
